Heavenly Baileys Irish Cream Cheesecake

Ingredients:

Crust:

  • 10 whole graham crackers, broken into pieces
  • 1 1/4 cups pecans
  • 1/4 cup sugar
  • 6 tablespoon butter, melted

Filling:

  • 1 1/2 pounds cream cheese (room temperature)
  • 1 cup sugar
  • 3 large eggs (room temperature)
  • 1/3 cup Baileys Irish Cream liqueur
  • 1 teaspoon vanilla extract
  • 3 ounces white chocolate, broken into pieces

Topping:

  • 1 1/2 cups sour cream
  • 1/4 cup powdered sugar
  • 1 1/2 ounces imported white chocolate, grated
  • 24 pecan halves, lightly toasted

Directions:

For Crust:
Preheat oven to 325° F. Lightly butter 9 inch springform pan. Finely grind graham crackers, pecans, and sugar in processor. Add butter and blend, using on/off turns. Press crumbs onto bottom and 2 inches up sides of prepared pan. Refrigerate 20 minutes.

For filling:
Using electric mixer, beat cream cheese and sugar in large bowl until smooth. Whisk eggs, Baileys, and vanilla in bowl until just blended. Beat egg mixture into cream cheese mixture. Finely chop white chocolate in processor using on/off turns. Add to cream cheese mixture.

Transfer filling to crust-lined pan. Bake until edges of filling are puffed and dry-looking and center is just set, about 50 minutes. Cool on rack.

For topping:
Mix sour cream and powdered sugar in small bowl. Spread topping onto cooled cake. Refrigerate until well chilled, about 6 hours (may be prepared one day ahead). Sprinkle grated chocolate over cake. Place pecans around edge and serve.

Deluxe Baileys Irish Cream Cheesecake

Ingredients:

  • 24 ounces cream cheese, softened
  • 2 cups vanilla crumbs
  • 1/3 cup butter, melted
  • 1/2 cup sugar
  • 3 eggs (room temperature)
  • 2 tablespoons flour
  • 1 cup Baileys Irish Cream liqueur
  • 1 teaspoon vanilla
  • 1 cup white chocolate, grated

Directions:

Preheat oven to 350°F. Combine the crumbs and butter in a medium-size bowl. Press on the bottom of a 9-inch springform pan. Bake in oven for five minutes. Remove and set aside.

Cream the cheese and sugar. Beat in the eggs, flour, liqueur and vanilla until smooth. Pour mixture onto crust and bake for 40 minutes.

Turn off oven and leave in oven for another 15 minutes. Remove from oven and let cool. After cheesecake has cooled, sprinkle white chocolate on top.

Refrigerate overnight.

Ultimate Baileys Irish Cream Cheesecake

Ingredients:

  • 1 tablespoon unsalted butter, softened
  • 2 cups graham cracker crumbs
  • 2 cups granulated sugar, divided
  • 1/2 cup unsalted butter, melted
  • 2 1/4 pounds (36 ounces) cream cheese, softened
  • 5 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 cup Baileys Irish Cream liqueur
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1 to 2 ounces semisweet chocolate

Directions:

Preheat oven to 325° F. Coat bottom and sides of a 10-inch springform pan with softened butter.

Using a fork, combine graham cracker crumbs, 1/2 cup of the sugar and melted butter in a medium bowl until well blended. Then evenly press crumb mixture onto the bottom and 1 inch up the sides of buttered pan.

Beat cream cheese in a mixing bowl until smooth. Add remaining 1 1/2 cups sugar and beat until smooth, scraping down sides of bowl as needed. Add eggs, one at a time, making sure to scrape sides after each addition. Beat until well incorporated and very smooth. Beat in vanilla extract and Bailey's Irish Cream until well mixed.

Pour into prepared pan and bake in preheated oven for approximately 1 hour and 15 minutes or until center is the consistency of set gelatin.

Remove cake from oven and let cool on a wire rack away from drafts. When cool, remove springform and refrigerate until ready to serve. When ready to serve, whip heavy cream with confectioners' sugar and garnish top of cake with whipped cream rosettes. Shave chocolate over top.

Delicate Baileys Irish Cream Cheesecake

Ingredients:

  • 1 1/2 cup graham cracker crumbs, coarse
  • 4 tablespoons butter, melted
  • 15 ounces cheese, ricotta
  • 8 ounces cream cheese
  • 4 eggs, lightly beaten
  • 1/2 cup sugar
  • 1/3 cup Baileys Irish Cream liqueur
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Directions:

Combine crumbs and butter, press over bottom and sides of greased 9-inch springform pan. Chill. Preheat oven to 325° F.

Beat together ricotta and cream cheese until smooth. Add remaining ingredients, beat until smooth. Pour mixture into pan.

Bake 1 hour and 15 minutes or until firm in middle (place a shallow pan of water in oven to cook under the cheesecake so it doesn't crack). Cool 20-30 minutes in pan.

Refrigerate overnight for best results.

Chocolate Chip Baileys Irish Cream Cheesecake

Ingredients:

For Crust:

  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons butter, melted

For Filling:

  • 2 1/4 pounds cream cheese (room temperature)
  • 1 2/3 cups sugar
  • 5 eggs (room temperature)
  • 1 cup Baileys Irish Cream liqueur
  • 1 tablespoon vanilla extract
  • 1 cup semisweet chocolate chips

For Coffee Cream:

  • 1 cup chilled whipping cream
  • 2 tablespoons sugar
  • 1 teaspoon instant coffee powder
  • Chocolate curls as garnish

Directions:

For Crust:
Preheat oven to 325° F.

Coat a 9 inch spring form pan with vegetable cooking spray. Combine crumbs and sugar in pan. Stir in butter. Press mixture into bottom and 1 inch up the sides of the pan. Bake until light brown, usually about 7 minutes. Maintain oven temperature at 325° F.

For Filling:
Beat cream cheese until smooth with and electric mixer. Gradually add sugar, then eggs one at a time, then Baileys and finally the vanilla.

Sprinkle half of the chocolate chips over crust. Spoon in filling. Sprinkle with remaining chocolate chips.

Bake until cake is puffed, springy in the center and golden brown, about 1 hour & 20 minutes.

Cool cake completely in refrigerator.

For Cream:
Beat cream, sugar and coffee powder until peaks form. Spread mixture over cooled cake. Garnish with chocolate curls.

Marbled Baileys Irish Cream Cheesecake

Ingredients:

For Crust:

  • 4 tablespoons unsalted butter, melted
  • 1/4 cup sugar
  • 1/4 cup cocoa
  • 1 package graham crackers, ground fine

For Filling:

  • 24 ounces cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs (room temperature)
  • 3/4 cup Baileys Irish Cream liqueur
  • 2 semisweet chocolate squares

Directions:

Preheat oven to 350° F.

Combine butter, sugar and cocoa powder. Stir in crumbs. Press evenly over bottom of greased 9-inch springform pan and bake at for 10 minutes. Cool pan and grease sides.

Beat cream cheese until smooth. Gradually beat in sugar. Beat in eggs, one at a time. Blend in Baileys.

Pour about 1/3 mixture into a bowl and stir in melted chocolate. Pour half of plain mixture into prepared pan. Drizzle with half the chocolate mixture. Repeat layers. Make a marbled design by gently swirling batter with a knife. Bake 10 minutes, then 55 minutes at 250° F.
