Mom's Chess Square Recipe



Mom's Chess Square recipe may or may not be Irish. But it is definitely easy and delicious.

I make several batches of these every Christmas for friends and family. This time they all insisted I share the recipe with the world by publishing it on my site. So here you go...

Ingredients:

Cake:

  • 1 yellow cake mix
  • 1 egg
  • 1 stick butter, softened

Topping:

  • 3 eggs
  • 16 oz. confectioner's (powdered) sugar
  • 8 oz. block cream cheese, softened

Directions:

Preheat oven to 350° F.

Combine cake mix, one egg, and butter in large mixing bowl. Mix on low speed until moistened, then on medium speed until completely blended. Batter will be the consistency of cookie batter.

Put batter into 9 x 13 cake pan and press until entire bottom surface is covered. Try to flatten the batter as much as possible.

Wash out mixing bowl and beaters.

Combine 3 remaining eggs, powdered sugar, and cream cheese. Mix on low speed until cream cheese dissolved, then move up to medium speed. Mix until very smooth and creamy.

Pour mixture on top of cake mixture.

Bake uncovered for 40-45 minutes. Remove from oven when the top is starting to turn golden brown.

Cool completely before cutting.
